Hotel Perce Neige
During a trans-Atlas journey, I stopped in Ifrane. Arrows pointed to “Perce Neige”.
Pretty name, isn’t it? Eager for curiosity, I pushed open the glass door, there it was, shy, discreet, jostling the cedars, springing from the earth.
… A superb little charming hotel, all cheerful, all fresh, seemed to me to wait, to be there only for me; he welcomed me with a smile!
A hotel freshly redecorated from A to Z with exquisite taste.
The height of delight when the butler served me my first dish at the restaurant! What a delight, what class!!
A chef who lovingly concocts the Perce-Neige salad for you, enhanced like a magic wand with rich flavors that can only be found here.
The baguette ‘a great chef… And the fairy tale lights up again, when “La salmonée” comes on stage. Lady trout, goddess of the land, mermaid of clear waters, so coquettish under her court of the finest moss, in shimmering colors, with the delicate scents of vegetable plants.
But, already, too early, much too early, the dessert, it’s simple – very simple – but what simplicity then! “Fresh fruit salad”.
Aromatic as you wish, with subtle scents, which do not leave you and intoxicate you for a long, very long time!!!
How sweet it is to cross paths with such wonders… Rare, very rare, too rare seems to me, alas.
